Sweet potato and goats cheese rosti

Originally, it was a recipe from Waitrose, but here it’s a healthier bastardised version. I grated a sweet potato and added chopped onion and garlic. The original recipe called for the latter to be fried and these – and more oil – added to the mix. I didn’t do this, adding them raw instead. Then into the mix went some goats cheese and a beaten egg to bind. It made four small rosti that went in an oven at 220C for 30 minutes. After this, more cheese on top and back in for 5 more minutes to melt.

This went with two salads: chopped lettuce, carrots, cucumber and tomatoes made one. The other was steamed green beans with chopped red onion, whole grain mustard and a little honey – delicious, and crunchy too! The weather was good enough to enjoy dinner outside, which we did so with a nice crisp glass of Chiliean chardonnay.
