Well, I can see I’ll have to serve this again. Just slice up a pound cake, then top each slice with some pineapple which you’ve heated on the stovetop. That’s it. Everyone will swoon and moan and call you a genius. Not an unwelcome reaction, all things considered.
This was another one of those amazing sugar-free pound cakes from Servatii’s, a bakery in my neighborhood. Quite a steal at $5.45 for a whole cake. The pineapples were from the freezer department at Trader Joe’s. It would be even better if you buttered the slices of pound cake and gave them about a minute each side on a hot grill pan, but not doing so leaves the cake even more moist.
