A very large courgette

I was given this home-grown courgette. Isn’t it huge? My first thought is to hollow it out, stuff it with things and bake it. I’m told this is a sound idea, in that courgettes this big don’t tend to be very tasty by themselves. So what do I do? I think maybe minced beef and tomatoes, perhaps with garlic and herbs? Served with what, though?

If I do hollow it out to bake it filled, I could use the discarded core in a vegetable soup, perhaps? This bears thinking about…
